Green Salad with Spirit Tree Dressing

Ingredients

Green Salad

  • 4 oz (100 g) baby spinach
  • 4 oz (100 g) baby arugula
  • 1 shallot, thinly sliced
  • 8 strawberries, thinly sliced
  • ½ cup sunflower seeds

Spirit Tree Dressing

  • ¼ cup balsamic vinegar
  • 3 tbsp sugar
  • 2 tbsp Dijon mustard
  • ½ tsp soy sauce
  • ¼ cup extra-virgin olive oil

Instructions

  1. With a hand blender or in a food processor, combine all dressing ingredients except olive oil.
  2. With the machine running, slowly drizzle in olive oil and mix until fully combined.
