A delicious Banana Bread, topped with warm Sticky Toffee topping

Banana Bread

Ingredients

  • 2 large ripe bananas
  • 2 cups of all purpose flour
  • 1 cup of brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 1 1/4 tsp baking powder
  • 1 tbsp vanilla
  • 2 eggs

Sticky Topping

  • 1/2 cup brown sugar
  • 2tbsp butter
  • 1tsp vanilla
  • 1 tbsp Milk or cream
  • I will add a splash or orange juice and grated orange rind to the loaf and the topping on occasion.

Instructions

  1. Mix brown sugar with bananas.
  2. Add remaining ingredients ,except eggs and beat on medium for a couple of minutes.
  3. Add eggs and continue to beat for another minute or so. Do not over beat
  4. Bake in a well greased loaf pan ( use butter! ) for about an hour at 350oF (convection ovens may only take 45)
  5. For the Sticky Toffee Topping: on the stove, in a sauce pan, melt butter, add vanilla, mix in brown sugar and cream. Stir until sugar dissolves.
  6. Remove loaf from oven once it's done baking, pour the delicious topping over the whole loaf, replace in oven for another 2 minutes.
