Yellow Mustard Pretzel Bites

I get great satisfaction out of using ingredients from my fridge or pantry that would have otherwise gone to waste. We’ve all done it: bought something at the grocery store we thought we needed only to get home and realize we already had plenty. Somehow I have accumulated three bottles of yellow mustard. Yellow mustard is not an ingredient that goes fast in my house so it was time to think of creative ways to use it up. Of course, thanks to google I didn’t really have to think at all.
My Google search for “yellow mustard recipe ideas” led me mostly to marinades and dips. Then I came across a recipe for pretzel bites – pretzels and mustard are a perfect combo! Although traditionaly used as a dip, I decided to bake the mustard into the pretzels. This gave the pretzel bites a bold tangy flavour and an irresistible golden colour.
Yellow Mustard Pretzel Bites

Dough
- 2 1/2 cups bread flour
- 1/2 tsp salt
- 1 tbsp sugar
- 1 tbsp active dry yeast
- 1/2 cup warm water
- 1/2 cup mustard
Topping
- 1/2 cup warm water
- 2 tbsp baking soda
- course salt
- 3 tbsp butter, melted
Instructions
- Place dough ingredients in bread machine and press the "dough" setting (This recipe can also be made in a food processor or by hand).
- Let dough rise for at least one hour.
- Shape into pretzel bite sized pieces.
- Mix water and baking soda until baking soda is completely dissolved.
- Dip each bite into water and baking soda mixture and sprinkle with course salt.
- Bake at 500° for 7 minutes.
- Once removed brush with melted butter.
- Eat warm straight out of the oven or reheat if eaten at a later time.
