Priceless for potatoes: The quarry would be in the heart of the Honeywood plateau, a parcel of exceptional vegetable land twice the size of Holland Marsh. The area’s farmers have their own reasons to love the porous limestone that lies not far below their prized Honeywood Loam: it’s what drains the soil while reducing the need to irrigate by wicking moisture from below.
