Summer Italian Pizza

Ingredients

  • 1 package frozen pizza dough
  • Olive oil
  • ½ cup mozzarella, grated
  • 2 oz (50 g) baby arugula
  • 2 oz (50 g) baby spinach
  • 8–10 cherry tomatoes, halved
  • 1 cup ricotta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F.
  2. Roll out dough, drizzle with olive oil and sprinkle with mozzarella.
  3. Bake for 8 minutes (until crust starts to turn golden).
  4. Remove from oven and top with greens, tomatoes, ricotta, salt and pepper, and another drizzle of olive oil.
  5. Bake again until toppings start to wilt (5–7min).
