Revival 1863 Cucumber Green Tea Collins

Move over Tom – this mocktail is a cool new twist, delivering hits of juniper and botanicals with zero-proof gin, crisp cucumber and green tea.

At Orangeville’s Revival 1863, a speakeasy-style lounge with a “secret” entrance through the Barley Vine Rail Co., mixologist Karolina Wojcik offers libations such as the Cucumber Green Tea Collins made with zero-proof “gin” and hints of matcha.

Revival 1863 Cucumber Green Tea Collins

Ingredients

  • 1oz 0% gin
  • 1.5oz house made cucumber green tea syrup (recipe below)
  • ½ oz lemon juice
  • Simple syrup to taste
  • soda
  • SYRUP
  • 1 cup water
  • 1 cup sugar
  • 2 green tea bags or 2 teaspoons of matcha
  • 1/2 cucumber, peeled and thinly sliced
  • In a small pan, heat water and sugar. After sugar is dissolved, remove from heat and add green tea bags or matcha. Steep for 5-7 minutes, remove tea bags and allow syrup to cool. Add thinly sliced cucumber and stir. Refrigerate for at least 2 hours and strain before use.

Instructions

  1. Muddle 0% gin with cucumber green tea syrup and lemon juice, then top with soda, ice and syrup to taste.
  2. Serve in a highball glass and garnish with a thinly slivered cucumber skewer and a slice of lemon.
