Owen’s simple summer meal in a bowl is the ultimate comfort food. The quantities of ingredients are approximate and can be changed according to taste.

Garden Veggie Boil-up

Ingredients

  • 1 tbsp salt
  • 2 lbs mini red or white potatoes
  • 1 lb carrots, peeled and cut into chunks
  • ½ lb green beans, trimmed and halved
  • 4–6 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Fill a medium pot with cold water. Add a tablespoon of salt and the potatoes. Bring to a boil.
  2. Once potatoes are about half cooked, add carrots. When carrots are almost cooked through, add the beans and continue to cook until beans are tender and potatoes can be broken up with a fork.
  3. Drain and stir in butter with a wooden spoon, using the spoon to coarsely mash the potatoes. Season with salt and pepper and serve hot.
