Banana Bread

Ingredients
- 2 large ripe bananas
- 2 cups of all purpose flour
- 1 cup of brown sugar
- 1/2 cup maple syrup
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/2 tsp salt
- 1 1/4 tsp baking powder
- 1 tbsp vanilla
- 2 eggs
Sticky Topping
- 1/2 cup brown sugar
- 2tbsp butter
- 1tsp vanilla
- 1 tbsp Milk or cream
- I will add a splash or orange juice and grated orange rind to the loaf and the topping on occasion.
Instructions
- Mix brown sugar with bananas.
- Add remaining ingredients ,except eggs and beat on medium for a couple of minutes.
- Add eggs and continue to beat for another minute or so. Do not over beat
- Bake in a well greased loaf pan ( use butter! ) for about an hour at 350oF (convection ovens may only take 45)
- For the Sticky Toffee Topping: on the stove, in a sauce pan, melt butter, add vanilla, mix in brown sugar and cream. Stir until sugar dissolves.
- Remove loaf from oven once it's done baking, pour the delicious topping over the whole loaf, replace in oven for another 2 minutes.
