Curried Rice with Lentils

Ingredients
- 1/2 Spanish Onion chopped
- 1 clove garlic
- 1 carrot - sliced thinly
- 1/4 cabbage thinly sliced or shredded
- 1 ½ cups Basmati rice
- 1 can lentils
- 1 egg beaten
- 3 green onions thinly sliced
- 1/4 cup fresh coriander
Sauce:
- 2 tbsp soy sauce
- 1 tbsp medium curry paste
- 1/4 cup sweetened coconut
- 1/4 cup vegetable broth (or chicken if non-vegan OK)
Instructions
- Mix sauce ingredients in a bowl and set aside to soak.
- Stir fry onion, garlic, carrot and cabbage 5-10 minutes until soft.
- Add in egg and cook with vegetables.
- Add rice, lentils and sauce and gently stir until heated through.
- Sprinkle thinly sliced green onions and/or fresh coriander on top.
- Serve with a green vegetable such as seared asparagus.
It doesn’t comply with my understanding of VEGAN with an egg in it.
