A meatless dish with loads of flavour – enough to enchant any carnivore!

Curried Rice with Lentils

Ingredients

  • 1/2 Spanish Onion chopped
  • 1 clove garlic
  • 1 carrot - sliced thinly
  • 1/4 cabbage thinly sliced or shredded
  • 1 ½ cups Basmati rice
  • 1 can lentils
  • 1 egg beaten
  • 3 green onions thinly sliced
  • 1/4 cup fresh coriander

Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp medium curry paste
  • 1/4 cup sweetened coconut
  • 1/4 cup vegetable broth (or chicken if non-vegan OK)

Instructions

  1. Mix sauce ingredients in a bowl and set aside to soak.
  2. Stir fry onion, garlic, carrot and cabbage 5-10 minutes until soft.
  3. Add in egg and cook with vegetables.
  4. Add rice, lentils and sauce and gently stir until heated through.
  5. Sprinkle thinly sliced green onions and/or fresh coriander on top.
  6. Serve with a green vegetable such as seared asparagus.
